Advanced Nutrition and Metabolism
Learn the intricacies of the human immune system and the mechanisms of nutrition and metabolism. During 12 weeks of online study, you’ll gain a deep understanding of the structures of nutrient molecules and how they are digested, utilized, burned for fuel and stored in the human body. Utilizing recorded online lectures, video demonstrations, live online office hours with the instructor and weekly quizzes, the course will cover many major biological molecule classes, including water, proteins, carbohydrates, lipids, vitamins and minerals.
This course is designed for post-baccalaureate health professionals applying to health programs and applicants to the Masters in Advanced Study in Maternal and Child Nutrition program as a prerequisite. Before registering, students must complete lower-division coursework in nutrition science, and at least one college-level biochemistry course to benefit from this material.

- Describe the structure and function of biological macromolecules: proteins, carbohydrates and lipids
- Describe the structure and function of biological micromolecules: vitamins, minerals and water
- Understand the influence of hormones, neuropeptides and other signaling molecules in the metabolic pathways used in the body

- Advantages of various field and laboratory methods used to measure body composition
- Recommended intakes, deficiencies and toxicities associated with major minerals
