Step-by-Step Winemaking

Learn winemaking by watching UC Davis instructors and speakers produce wine during real-time demonstrations and videos. This course is designed to give novice home and small-scale winemakers experience before the varietal harvest in September and October. Emphasis is on the actual process and complemented with basic technical aspects of winemaking. Students will view instructors and speakers working with incoming fruit, crush red and white grapes, as well as pressing juice using traditional and non-traditional methods. In addition, cap management, yeast and malolactic inoculation, racking, filtration and bottling will be explored. This class will be held virtually at the UC Davis Robert Mondavi Institute for Wine and Food Science Winery.
